This is the first in a series of restaurant “hacks”.  I’ll post a new recipe every Thursday in February and March.  Each recipe will be from Todd Wilbur’s Top Secret Recipes.  I’m taking the recipes from two of his books, Top Secret Recipes Step By Step and Top Secret Restaurant Recipes 3.

The recipes I chose are some of my favorites from various restaurants including Mimi’s Cafe, Panera, PF Chang’s, Ruth’s Chris, Raising Cane’s & the final recipe will be an oldie but goodie dessert that’s no longer available at Chili’s.   Leave a comment if you can guess what that is?  I’m sure I’m not the only person that misses this dessert.

Let’s get down to business

Today’s recipe comes from Mimi’s Cafe.   I’m a creature of habit.  I usually get the exact same thing, a salad and a muffin.  The muffins are big and fluffy.   My favorite is the Buttermilk Spice Muffin.   This is a pretty decent hack.  I can’t say that it tastes EXACTLY like Mimi’s but it’s pretty close.  According to the book, Top Secret Restaurant Recipes 3, Mimi’s has a recipe for the muffins on their website.  However, Wilbur says there’s something “slightly lacking” in that particular recipe so he came up with his own.

I only have a few issues with this recipe:

  1. It makes a lot of batter.  I had some left over and I would’ve had even more to show you if I didn’t have to throw away some batter along with a cupcake liner.   For some reason the liner kept falling over. Mimi's Buttermilk Spice Muffins
  2. The instructions for the topping aren’t the best in my opinion.  The reason I say this is because the walnuts, sugar, cinnamon and nutmeg are not all the same consistency.   I say mix everything but the nuts and sprinkle that on the muffin.  After doing that, sprinkle the nuts on top of the muffin batter.

3.  It turns out “a HAIR dry”.   I let a friend try the muffin and that was her exact thought.  I agree.          There’s something missing but I’ve told you before I’m not really a cook so I really wouldn’t know          how to fix this.

Overall I give the taste a 95/100 as compared to the actual muffin from Mimi’s Cafe.   I think that’s pretty darn good!  Grab a cup of coffee and munch on.
